Tartare with fried egg and chive bread

Meal for 4 people

Ingredients

• For the Tartare:
• 250g fresh tartare beef
• 1 onion, finely chopped
• 1/2 teaspoon of sharp mustard
• 1 teaspoon capers
• 1/2 small gherkin, finely chopped
• 2 sardine fillets, cut up small
• 1 egg or 1 – 2 egg yolks
• Paprika powder
• Salt & pepper
• 1 tablespoon olive oil
• 2 tablespoons cognac
• 2 drops Worcestershire sauce
• Further ingredients:
• 8 slices strong bread
• Butter
• 2 bunches chives finely chopped
• 1 small packet of potato crisps
• 4 lettuce leaves to garnish
• 4 small tomatoes, quartered
• 4 eggs
• Oil for cooking the fried eggs

Preparation

Mix all the ingredients for the tartare and spread on four slices of bread; spread the remaining 4 slices with butter and chives.  Place one slice of each on a plate and garnish generously with lettuce, tomatoes and crisps.  Cook 4 fried eggs and place on each of the tartare slices.
