Courgette Omelette
Meal for up tp 4
Ingredients
• 8 eggs
• 2 courgettes, diced
• 200g feta cheese, diced
• 1 pepper, diced
• 1 bunch of spring onions, cut into small rings
• 1 large onion, cut into fine rings
• Salt & pepper
• 4 tablespoons of milk (may also be replaced by cream)
• 4 tablespoons sparkling water
• Olive oil
• A few basil leaves to garnish
Preparation
Fry the onions with the courgettes in olive oil, season to taste with salt and pepper and keep hot. Beat the eggs with the milk and water, lightly season with salt and pepper and stir 1/4 of it into hot olive oil, leave to set, turn and lightly fry the other side as well. Cook a total of 4 omelettes in this way and keep hot. Fry off the pepper and spring onions in the still hot pan, whilst the omelettes are being put onto the plates and covered with the courgette mixture. Spread the pepper mixture and the feta cheese over this and garnish with basil leaves.
