Strawberry Soufflé

Desert for 10 people

You will need:

10 soufflé moulds; egg slicer; cups; bowl; mixer; bain marie or small saucepan filled 2/3 with water; heat source; oven grill; oven at 180 °C (fan-assisted oven 165 °C); oven gloves and cutlery.

Ingredients

• 10 eggs M or L
• Grease pan spray 
• 175g sugar
• 500g strawberry puree
• 200ml whipped cream
• 200g strawberry pieces   
• 20ml Casis de Dijon or cherry liqueur

Preparation

Take the eggs out of the box in the refrigerator 10 minutes before using
Grease the moulds and sprinkle a little sugar in them   
Divide the eggs with the egg slicer into egg white and yolk
Whisk the egg yolk with 75g sugar and add the strawberry puree  
Beat the egg white in the bowl until stiff and add the yolk mixture
Fill the moulds and place them in the bain marie
Place this in the middle of the hot oven for 10-15 minutes, and lightly bake the soufflés
Beat the whipped cream in the mixing bowl with the pieces of strawberry and liqueur until semi-stiff
Delicious as a party dessert

Egg Tip:

Never open the oven door when cooking light dishes: if you do the dish will sink.
