Egg Biscuit

Serves 2-4

Ingredients

• 4 hard-boiled eggs M or L          
• 4 rusks
• 2 tbsp curds
• 2 tbsp tomato ketchup or mayonnaise
• Salt and pepper
• 1 tsp tabasco or Worcestershire sauce
• ½ box of garden cress

Preparation

Hard boil the eggs in the usual way
Cut 2 eggs into slides and finely mash the remaining eggs
Place the rusks on a board    
Mix the mashed eggs with the curds  
Add the ketchup or mayonnaise, salt and pepper and the tabasco      
Spread this onto the rusks    
Garnish with the egg slices and garden cress
Delicious as a snack

Egg Tip:

Immediately after boiling, allow the eggs to cool by washing them in cold water.
