Apricot Mousse

Ingredients

• 2 medium eggs
• 2 tbsp apricot jam, or sugar or sweetener 
• 200g dried apricots
• 3 tbsp apricot brandy

Preparation

Remove the eggs from the box and place in the refrigerator
Divide them into egg white and yolk with the egg cutter
Use the yolks for scrambled egg or omelette
Beat the egg white stiff with the jam
Puree the apricots with the brandy in the food processor
Add this to the egg white and mix this altogether   
Fill the cups with this
Delicious with a dab of cream and roasted almonds
